Pecan Pie Ingredients: 1 recipe pie dough (recipe follows) 3 eggs 3/4 cup sugar 1 cup dark corn syrup 1/8 teaspoon salt 2 tablespoons butter, melted 1 teaspoon vanilla flavoring 1 cup pecan pieces 10-12 pecan halves Preheat oven to 350 degrees. Line a 9" pie pan with pie dough. In a mixing bowl, start with the eggs and beat them lightly. Blend in sugar, corn syrup, salt, butter and vanilla flavoring. Mix in the pecan pieces. Pour mixture into the pie shell and bake until partly set, about 15 minutes. Remove from oven and garnish with the buttered pecan halves. Return the pie to the oven and bake until a toothpick inserted near the center comes out clean, (normally 20-25 minutes more). Remove and let cool. Serve warm or cool. I suggest vanilla ice cream as a topping
Pie Dough Ingredients: 2 cups all-purpose flour 3/4 teaspoon salt 2/3 cup solid vegetable shortening About 1/2 cup ice water Sift the flour and salt together into a mixing bowl. Cut in the shortening with a pastry cutter, fork or your fingers until the mixture is like cornmeal. Stir in just enough water that the mixture holds together. Pick up the dough and form into a ball and chill for at least 30 minutes. Divide the dough into two portions. Roll out one portion on a lightly-floured surface and use it to line a pie pan, trimming away excess. Fill as directed above.
